Mūsdienās glikozes sīrupiem ir liela nozīme cukura aizvietošanā pārtikas produktos. Sīrupu uzglabāšanas nosacījumi paredz sīrupu uzturēšanu augtas temperatūrās, kā rezultātā veidojas hidroksimetilfurfurāls (HMF). Ir trīs metodes HMF noteikšanai glikozes sīrupos; divas ir spektrofotometriskās, pēc Vaita un Vinklera un AEŠH metode. Šī darba uzdevums bija salīdzināt HMF daudzumu dažādos glikozes sīrupos nosakot to ar trim metodēm. No darba datiem, AEŠH un Vaita metodes deva līdzīgus rezultātus. Vinklera metode nav salīdzināma ja HMF saturs sīrupā ir ļoti zems. Otrais darba uzdevums bija noteikt HMF satura pieaugumu pie dažādiem uzglabāšanas nosacījumiem. Augsta temperatūra, īpaši sīrupiem ar augstu fruktozes saturu, sekmē straujam HMF pieaugumam sīrupos. In our days glucose syrups take a big part in food product technology replacing sugar. Storage conditions for syrups contain syrup handing in high temperatures; as a result hydroxymethylfurfural (HMF) is formed. There are three methods for the determination of HMF in glucose syrups: two spectrophotometric methods, after White and Winkler and a HPLC method. Aim of this work was to compare HMF values in different glucose syrups measured by the three methods. From work data, HPLC and White methods give similar values. Winkler method values are not comparable if HMF content in syrup is very low. Second aim of this work was to determinate the growing of HMF content in glucose syrup in different storage conditions. High storage temperature, especially for high fructose content syrups, promotes high growing of HMF.
