Lunasīna un proteīnu līmeņu korelācija tritikālē

Abstract
Lunasīns ir 43 aminoskābju ķēdes peptīds, kuru sākotnēji atklāja sojas pupās, bet vēlāk arī kviešos, rudzos, tritikālē un miežos. Lunasīnu ekstrahē no miltiem ar nātrija fosfātu buferētu nātrija hlorīda šķīdumu, kurā šķīst arī ūdenī šķīstošie proteīni. Pētījuma mērķis bija noskaidrot, vai lunasīna saturs korelē ar proteīnu saturu tritikāles graudos. Atrasts, ka visi tritikāles genotipi satur vidēji ap 12%.mitruma. Ar Kjeldāla metodi noteiktais kopproteīna daudzums sešu tritikāles genotipu graudos vidēji ir no 11,4 līdz 16,8%. Vislielākais tas ir genotipam 0006-31, kas satur vismazāk lunasīna peptīda. Ar WST-8 metodi izmērītais ūdenī šķīstošo proteīnu daudzums vidēji ir 30-50% no kopproteīna daudzuma, kas noteikts ar Kjeldāla metodi.
 
Lunasin a 43 amino acid chain long peptide originally was found in soy beans but later in wheat, rye and barley. Lunasin is extracted from flour with sodium phosphate buffered sodium chloride solution containing also other water soluble proteins. The aim of the study was to determine whether the content of lunasin correlates with the content of protein detected in triticale grain. It has been found that all genotypes of triticale contain around 12% of moisture. The Kjeldahl method shows that the crude protein content in grains of six triticale genotypes is approximately 11.4 to 16.8%. The genotype 0006-31 contains the biggest protein content but the smallest content of the lunasin. Measured by WST-8 method amount of water-soluble proteins in average was 30-50% of that of the crude protein determined by the Kjeldahl method. We found a high correlation between the levels of total protein and soluble protein.
