Abstract
Akrilamīds – pārtikas ķīmiskais piesārņojums. Švalkovskis G., zinātniskie vadītāji As. prof., Dr. ķīm. Jākobsone I., As. prof., Dr. ķīm.
Acrylamide – food chemical pollution. Svalkovskis G., As. prof., Dr. chem. supervisor Jakobsone I. and As. prof., Dr. chem. supervisor Mekss P. Bachelor thesis, 42 pages, 15 tables, 14 figures, 25 literature references, 1 addition. Latvian. GAS CHROMATOGRAPHY, ELECTRON CAPTURE DETECTOR, MASSPECTROMETRY, DETECTION OF ACRYLAMIDE. 2002. April found toxic substance – acrylamide in Sweden, which is in thermal treated food. Later revelations had done other states in the world too. The target is to analyse local production in Latvia and explore probable ingredient and conditions, which can form acrylamide. Results were got from products, which contains starch and farina. Products that contain starch (crisps, French fries) have acrylamide in various concentrations and which contains farina not always.
