Abstract

Cietes sastāva un daudzuma izvērtējums dažādu šķirņu kartupeļos. Kreicberga A., zinātniskais vadītājs dr. ķīm., asoc. prof. Jākobsone I. Darbā apkopota literatūra par kartupeļu ķīmisko sastāvu, cieti, tās sastāvu un veidiem, kā arī cietes un amilozes noteikšanas metodēm. Eksperimentāli tika veikta cietes daudzuma noteikšana un izvērtēšana ar titrimetriski un polarimetriski, kā arī prakstiski veikta cietes mehāniskā iegūšana. Tika noteikts amilozes daudzums ar spektrofotometrisko metodi. Izvērtēta arī metožu piemērotība darba mērķim. Literature about potato chemical structure, starch structure, types and properties of it, also about starch and it’s structure determination methods was compiled in this work. Starch quantity determination was made by titrimetric and polarimetric method, also mechanical acquisition of potato starch has been done. Quantity of amylose was determined by spectrophotometry.
