dc.description.abstract | Darbā noteikts bioloģiski aktīvo vielu – kofeīna un fenola savienojumu daudzums Latvijas tirdzniecības vietās pieejamos šķīstošās, maltās un bezkofeīna kafijas zīmolos. Kafijas zīmolos, izmantojot spektrofotometriju, tika noteikts kopējo fenola savienojumu daudzums un antiradikālā aktivitāte, bet izmantojot augstefektīvo šķidruma hromatogrāfiju, tika noteikts kofeīna daudzums.
Augstāka antiradikālā aktivitāte un lielāks kopējo fenola savienojumu daudzums tika konstatēts šķīstošajā kafijā. Bezkofeīna kafijas zīmolos, attiecība uz fenola savienojumu daudzumu un antiradikālās aktivitātes līmeni, netika konstatētas būtiskas atšķirības salīdzinājumā ar tā paša veida parastās kafijas zīmoliem. Tika konstatēta būtiska maltās kafijas dzēriena pagatavošanas metodes ietekme uz kofeīna daudzumu kafijas dzērienā. | en_US |
dc.description.abstract | In this paper quantity of biologically active compounds – caffeine and phenolic compounds was determined in soluble, ground and decaffeinated coffee brands available in different market places in Latvia. Quantity of total phenolic compounds and antiradical activity in coffee brands was determined using spectrophotometry, but quantity of caffeine was determined using high performance liquid chromatography.
Higher antiradical activity and quantity of total phenolic compounds was found in soluble coffee brands. Amount of phenolic compounds and antiradical activity level in decaffeinated coffee brands did not show any significant differences compared to the same types of ordinary coffee brands.
