Bakalaura darbā pētīts Latvijā izplatītu sēņu ķīmiskais sastāvs - parastā gailene (C. cibarius), brūnā apšubeka (L. durisculum), parastā apšubeku (L. aurantiacum), parastā žultsbeka (T. felleus), parastā cūcene (L.turpis), egļu baravika (B. edulis) un pelēkā tintene (C. atramentarius). Gailenes tika ievāktas pilsētu apkārtnēs, taču bekas, cūcene, baravika un tintene - grants karjeru tuvumā. Darbā tika apkopota literatūra, kas saistīta ar bazīdijsēņu mikoķīmisko sastāvu, kas ietver sēņu vispārīgo raksturojumu un īpašības. No Latvijas reģioniem ievāktie sēņu paraugi tika analizēti, izmantojot dozimetriju, infrasarkano spektrometriju, induktīvi saistītās plazmas spektrometriju metālu satura noteikšanai, kā arī hromatogrāfijas metodes, lai identificētu un kvantitatīvi noteiktu nesaistītās taukskābes un mikosterolus. Šo paraugu ekstraktiem tika novērtēts ķīmiskais sastāvs savienojumiem, kas pakļauti ārējo faktoru ietekmei. Par pārtikā izmantojumu sēņu paraugiem kalpoja tirdzniecības tīklos iegādātās dažādas kultivētās sēnes - austersēnes (P. ostreatus), šimeji (Marmora čemurpūkaine)(H. tessellatus), šitaki (L. edodes), baltie šampinjoni (A. bisporus), brūnie šampinjoni (A. brunnescens), lielie, brūnie šampinjoni (A. brunneofibrillosus). Izvēlētajos potenciālo piesārņotāju areālos augošajām sēnēm, salīdzinot ar nepiesārņotā vidē ievāktiem paraugiem, būtiskas atšķirības ķīmiskajā sastāvā un mērītajos fizikāli-ķīmiskajos rādījumos, netika fiksētas. Gailenes var izcelt ar tikai tajās konstatēto acetilēntaukskābju klātbūtni, kas nodrošina to spēju aizsargāties pret kukaiņiem. Veiktais pētījums sniedz informāciju par sēņu ķīmisko sastāvu, bioloģiski aktīvajām īpašībām un apkārtējās vides ietekmi uz tām. The bachelor’s thesis studied the chemical compositions of common mushrooms in Latvia - golden chanterelle (C. cibarius), bolete (L. durisculum), orange oak bolete (L. aurantiacum), bitter bolete (T. felleus), ugly milk-cap (L. turpis), penny bun (B. edulis), common ink-cap (C. atramentarius). The golden chanterelles were gathered in urban areas, but the boletes, ugly milk-cap, penny bun, and the common ink-cap - near gravel quarries. This work presents a review of literature related to the mycochemical composition of basidiomycetes, including the fungi's general characteristics and characteristics. Samples of mushrooms collected from different regions of Latvia were analyzed using dosimetry, infrared spectrometry, inductively coupled plasma mass spectrometry to determine the metal content, as well as chromatography methods to identify and do a quantitative analysis of fatty acids and mycosterols. Extracts of these samples were evaluated for the chemical composition of the compounds that are exposed to external factors. Various cultivated mushrooms were purchased in supermarkets and served as food examples - oyster mushrooms (P. ostreatus), beech mushroom (H. tessellatus), shiitake (L. edodes), white champignon (A. bisporus), brown champignon (A. brunnescens), large brown champignon (A. brunneofibrillosus). No significant differences in the chemical compositions and measured physicochemical parameters were recorded for the mushrooms growing in the selected areas of potential pollutants, compared to the samples collected in an unpolluted environment. The golden chanterelle stands out being the only one that tested positive for the presence of acetylenic fatty acids, which ensures its ability to fight against insects. The conducted research provides information on the chemical compositions, biologically active properties of mushrooms, and the influence of the surrounding environment on them.
