Darbā pētīts mikro- un makroelementu saturs Latvijas biezpienā, nosakot 14 elementu koncentrācijas 27 biezpiena paraugos, kas ievākti zemnieku saimniecībās un tirdzniecības vietās. Elementu koncentrāciju noteikšanā izmantota atomu absorbcijas spektrometrija (AAS), bet standartmetožu rezultātu salīdzināšanai izmantota arī pilnīgas atstarošanās rentgenfluorescences spektrometrija (TXRF) un induktīvi saistītās plazmas masas spektrometrija (ICP-MS). Visu trīs standartmetožu precizitāte pārbaudīta, izmantojot references paraugu ar sertificētām elementu koncentrācijām. Ticami mērījumu rezultāti iegūti par 11 elementiem - Ca, K, Mg, Na, Fe, Zn, Mn, Cu, Cr, Ni, Pb. Novērtējot biezpiena saturu ietekmējošos faktorus, secināts, ka vislielākā ietekme uz mikro- un makroelementu koncentrācijām Latvijas biezpienā ir sezonāla rakstura procesiem - izmaiņām barības saturā, izmaiņām lopu vielmaiņā un elementu biopieejamībai. The research subject of the bachelor’s project is the content of micro and macro elements in Latvian cottage cheese. There were taken 27 cottage cheese samples from several farms and distribution places and there was determined concentration of 14 elements in these samples. The results concerning 11 elements were acknowledged to be acceptable. Concentrations of elements were determined using atom absorption spectrometry (AAS). To compare the results of standard methods, two more methods were applied: total reflection X-ray fluorescence spectrometry (TXRF) and inductively coupled plasma mass spectrometry (ICP-MS). The results of all three methods were tested using reference material of skim milk powder with certified values of element concentrations. Evaluating factors that influence the content of trace and major elements in cottage cheese, findings testify that the most influential factors are seasonal processes – differences of feed content and animal metabolism, as well as bioavailability of elements.
