The aim of the bachelor’s thesis was to investigate the ability of five berry pomace extracts of the genus Vaccinium to inhibit the formation of advanced glycation end products (AGE) and Abeta protein 1-42 aggregates in vitro. The effects of the extracts were studied on the formation of AGE in the reaction of serum albumin and methylglyoxal and on the spontaneous aggregation of Abeta 1-42 at elevated temperature and in the reaction with methylglyoxal. The obtained results show that the studied berry extracts inhibit the formation of AGE and Abeta 1-42 aggregates. Blueberry extract was more effective than other extracts in inhibiting AGE formation compared to controls, but Abeta 1-42 aggregation was most effectively inhibited by large cranberry and bog cranberry berry pomace extracts. The results of this study show that blueberry berry pomace extracts have the ability to inhibit the formation of AGE and Abeta 1-42 aggregates in vitro.
