Darbā ir apkopota literatūra par olbaltumvielām t.i. glutēnu un tā noteikšanas iespējām ar ELISA metodi un augsti efektīvo šķidruma hromatogrāfiju. Tika noteikts gliadīna un glutēna daudzums gan bezglutēna, gan glutēnu saturošos produktos. Veikta kvalitatīvā novērtēšana glutēna sastāvdaļām ar augsti efektīvo šķidruma hromatogrāfiju.

In this work is compiled literature about the protein – gluten and detection opportunities with ELISA test and high performance liquid chromatography. Was determined gliadin and gluten quantity in the gluten-free and gluten-containing products. Carried out, a qualitative assessment of gluten ingredients with high-performance liquid chromatography.
