The goal of this thesis is to describe water and olive oil optical properties in the near-infrared spectral range, to investigate potential usage of this spectral range for estimation of skin moisture by optical methods. In this thesis, possibilities to measure and image water and olive oil volume fraction using near-infrared spectral range are investigated. Different experimental setups are introduced for reflectance spectroscopy and imaging measurements in the near-infrared spectral range. Measurements in the spectral range of 900-2500 nm with water and olive oil samples of different volumes were carried out to introduce an absorption parameter, which could describe small changes in volume fraction of these substances. Imaging and mapping experiments of water and olive oil in the near-infrared spectral range were also performed by using a near-infrared camera and optical bandpass filters. In these thesis an absorbtion parameter were introduced, that can describe small changes in volume fraction of water and olive oil and shows potential for diagnostic measurements of skin.
